~Kid Friendly~Broccoli Salad
Broccoli (fresh) 1/2c. onion 1/2c. - 1cup sunflower seeds 1/2c. raisens 1/2c. real bacon bits 1c. hellmans mayo 1 tbls. white vinegar 2 tbls. sugar Mix all ingredients together and refrigerate. Went great with barbeque and My experience with my picky 4 yr. old niece and 5 yr. old nephew they loved it! |
Guilty but Proven Innocent Cheesecake3 Pkg. (8oz. each) Philadelphia brand free fat free cream
cheese, softened 1/3 c. honey 1 tsp. vanilla 3 eggs 1/3 c. graham cracker crumbs 1/3 c. low-fat granola cereal 1 tbsp. honey 1. mix cream cheese, 1/3 c honey and vanilla with electric mixer on medium speed until well blended. Add eggs; mix just until blended. Spray 9 inch pie plate with cooking spray; sprinkle bottom with crumbs. 2. Pour cream cheese mix into pie plate. 3. Bake at 325F for 45 min. or until center is set. cool. refrigerate 3 hours than top with cereal and honey. My favorite is adding low sugar cherry jam first than fresh fruit aaaaand then almonds and dark chocolate. YUMmm |
Classic Sweet potato Pie2 medium sweet potato
3 eggs 3/4 c. non-fat evaporated milk 3/4 c. splenda 1 tsp. vanilla 1 graham cracker crust Prepreation boil, de-skin and mix well sweet potato. mix potato, sugar and ev. milk. add eggs one by one than vanilla. pour into crust Oven at 425 ,cook for 45 min. top as you wish with preferably fresh whip and walnuts,yum |
Turkey, Green beans and Shrooms 2 lbs Ground turkey lean meat
1 bag frozen or fresh french cut greenbeans 1 can of (healthy choice) cream of mushroom soup mushrooms of your choice Prepreation cook meat in 2 tbl. olive oil until all pink is gone stir in mushrooms and than add greenbeans, can of mushrooms and cover simmer for 10-15 min. than chow |
Excellent Enchiladas

1/2 cup tomato sauce 1/2 cup salsa (of choice) 8 medium corn tortillas 1/2 pound extra lean ground beef 1 tsp chili powder 1 tsp cumin seeds dash of black pepper 1/2 cup low-fat cheddar or colby cheese Preparation Preheat broiler.
In a small bowl, stir together tomato sauce and salsa. Using about half the tomato sauce mixture, brush both sides of each tortilla. Stack tortillas on a plate and set aside. (This allows tortillas to soften.)
In a large skillet, cook beef over medium-high heat until brown about five minutes, stirring occasionally. Place in a colander and rinse under hot water. Drain well.
Wipe skillet with a paper towel. Return beef to skillet. Stir in refried beans, chili powder, cumin and pepper. Cook and stir for two minutes, or until heated through.
Spoon about 1/4 cup of the mixture, down the center of each tortilla. Roll up tortillas and place seam side down, in a l0x6x2-inch or 9x9x2-inch glass baking dish. Top with remaining tomato sauce mixture. Broil four inches from the heat for five minutes or until browned. You may substitute beef for chicken in this recipe.
